More fun with my new toy today… (and some mediterranean Cauliflower-Couscous in lettuce wraps)

By the way: the creamy white sauce was a silken-tofu aioli. I believe a more citrus-based non-creamy sauce would go better with the sweet potato and beetroot. I think those earthy, starchy veges need a light pasta sauce, something refreshing, while more “watery” veges like carrot or zucchini go well with creamy nut-based or chunky tomato sauces.

I will keep experimenting and will keep you all updated 🙂
